Ingredients:
- 2 tbsp. olive oil
- 2 medium onions, diced
- 6 cloves garlic, diced
- 4 tomatoes, chunked
- 1 tbsp. oregano
- 1 tbsp. basil
- 2 tbsp. red wine vinegar
- 1 cup water
- 1 cup Mrs. Renfro's Medium Salsa
- 2 zucchini, chunked
- 6-8 mushrooms, quartered
- 1 bell pepper, chunked
- Pasta of choice, cooked to package directions
Directions:
- In olive oil, sauté 2 medium, diced onions and 6 cloves of diced garlic.
- Add 4 chunked tomatoes, oregano, basil, red wine vinegar and water.
- When tomatoes soften, add Mrs. Renfro's Medium Salsa, zucchini, mushrooms and bell pepper.
- Simmer 20-25 minutes.
- Serve over pasta.
